Starbird Chicken, the California-based fast-casual chain known for its crispy, “feel-good” chicken, is officially landing in Denver. The brand’s first Colorado location will open later this year, tucked next to Einstein Bros. Bagels.

The new Starbird outpost will occupy a 2,435-square-foot space, backfilling a former Fresh Cannabis dispensary that vacated the site in 2024.

It marks a key part of Starbird’s broader expansion strategy, as the company moves beyond its San Francisco Bay Area roots into new markets across the country.

Founded in 2016, Starbird has built a following with its high-quality, antibiotic-free chicken, always hand-breaded using a proprietary gluten-free flour blend. The menu offers a mix of sandwiches, tenders, salads, and bowls, paired with a lineup of nine house-made sauces.

Starbird’s move into Denver is part of a seven-location franchise agreement with local group Whiplash Holdings, aiming to bring the brand’s chef-driven twist on fast food to the Mile High City and surrounding suburbs.

In addition to bringing new flavors to the area, Starbird plans to integrate into the local community by supporting the Denver Children’s Foundation and local high school programs.
